Ingredients
- 250 g rice noodles
- 80 g lentils, soaked
- 80 g olives, sliced
- 1 piece of cucumber, diced
- 300 g cocktail tomatoes, halved
- 100 g feta, diced
- 1 small red onion, chopped
- 4 tbsp white wine vinegar
- 4 tbsp olive oil
- 2 tbsp parsley, fresh or frozen
- Salt, pepper, oregano to taste
Preparation
- Prepare the noodles according to the package instructions –
Simply pour hot water over it and let it steep for about 5 minutes. - Mix all ingredients evenly together.
- Finally, season to your taste with salt, pepper, oregano and parsley.
